SOUPS
For the red lentil soup, the oil is poured into the pan and the chopped onions are roasted until they turn slightly pink.
Then flour is added and frying is continued on low heat.
If tomato paste is to be used, tomato paste is added, after roasting, diced carrots and thoroughly washed and drained lentils are added.
Add water to it, mix it and close the lid of the pot. Our soup is cooked on medium heat until it boils, and after boiling, it is cooked on low heat, stirring occasionally, until the lentils and carrots soften.
After the soup is cooked, it is well crushed with a hand blender.
Add black pepper, salt and optionally cumin and mix. Cook for another 5 minutes and remove from the stove.
Lentil Soup (200gr./90kcal)
First we boil the chicken.
We prepare the dressing and whisk the flour, yogurt and eggs in a bowl.
Add half a glass of water into it and whisk it well so that it is smooth.
We take three ladles of hot boiled chicken water into it and add it to the seasoning and whisk it well.
We add oil to the pot where I will prepare the soup, and fry the noodle without turning its light color.
Grate the garlic and add it to it and add its juice.
We add the shredded chickens and boil them all at once.
We add the seasoning to the soup and boil it for a minute.
We boil our soup one more time by adding half-squeezed lemon juice and salt into it. When it thickens, we turn off the stove.
We fry butter and red pepper on it and serve it. With pleasure.
Chicken Soup (200gr./175kcal)
First, wash the rice and put it in the pot.
Add 6 cups of water to it and boil it until soft.
When the rice is cooked, take it off the stove and add 2 glasses of water and let it cool.
Meanwhile, whisk together the egg yolk, yogurt and flour in a bowl.
Take 1-2 ladles of the soup's water and add it to the mixture. Let's add this slightly watered mixture to the warm soup and boil it for 1-2 minutes.
Let's heat dry mint, oil or butter on it and add it to the soup. Then let's mix the mint into the soup by mixing it with a ladle.
Rice and Yoghurt Soup (yayla) (200gr./140kcal)
Chop the onion coarsely into a deep pot and put it in the pot. Boil the lentils, rice, bulgur, until they soften, then pass them through the blender.
On the other hand, put butter and flour in a pan and fry it, then add the tomato paste.
Put 1-1.5 lukewarm water and make it smooth.
Put the prepared sauce in the pot, add salt, mint, red pepper flakes, black pepper on it, mix well, bring it to a boil and turn it off.
Ezogelin (200gr./91kcal)
We sprinkle a little water on flour in a bowl and knead it to create hard dough. In order to obtain grains like couscous, it is formed by hand.

Butter is melted in the pan and minced meat and onions are fried. Tomatoes cut into small parts, black pepper and salt is combined with the mixture and let it cooked for 2 more minutes. Chicken broth or water is put in the pan to boil for 5 minutes. There will be foams above the pan which is needed to be taken with a colander. Lastly, the prepared couscous is sprinkled into boiling water to cook for 5 more minutes.

It needs to be served fresh mint leaves.
Regional Ovmaç Soup (200gr./258kcal)
